The Italian mood still lingers in me, and for today I will share with you the following Italian recipe which we have enjoyed during our stay at mommy’s house. Like all my other recipes, this one is also easy and deliciously mouth-watering.
20 grams butter, melted
2 tablespoons olive oil
2 medium onions, thinly sliced
6 eggs slightly beaten
¾ cups grated parmesan cheese
1 small zucchini, thinly sliced
1 tablespoon shredded fresh basil
Using a brush, grease a round cake or pie pan with the melted butter and set aside.
Heat oil in another pan and add the onions.
Cook while stirring until the onions are soft.
Set aside to cool.
Combine, eggs, basil, cheese, zucchini, and onions in a bowl and mix well.
Pour mixture into prepared pan.
Bake in moderate oven for 30 minutes or until lightly browned and set. And that is it.
This flan is very appealing if you are hosting a brunch. Bon appetit!
